Invented in Taichung in the 1980s; Chun Shui Tang is the classic address.

What to drink
Tap water is boil-then-drink; bottled water NT$15/500ml. Kaoliang sorghum spirit is the national booze (58% ABV — sip). Taiwan Beer and Gold Medal are the local lagers; Hi-Chew mango and pineapple beers appear in summer.
Dining etiquette and practicalities
Tipping not expected; small change may be refused.
Do not stick chopsticks upright in rice — funeral symbolism.
